Each day it is progressing: last night I made cauliflower with lots of whipped cream cheese for the first time. I didn't put it in the blender, but wanted to disguise the taste for my husband so I just kept putting more and more in. It ended up being ½ of a container. I was hoping he would think it was some kind of fancy rice, which is what I usually serve him with chicken in mushroom sauce. It tasted great but overkill. It was really too rich for me. I would love to switch him to Keto and Intermittent Fasting for his health problems. It would help his brain and artery blockages.
I am spending my time tonight going through the trash because he threw away two boxes of my paperwork. I haven't gotten it all out yet but am working on it.
No one else would ever be interested in my calculations of fasting and eating but I want to keep track because I want to slowly extend my fasting hours. My eventual goal probably is fasting 18 hours a day, with a 6 hour eating window. Fasted last night 7:30pm to 11am = 15 ½ hr. Ate from 11am to 6:30pm=7 1/2 hrs. The good thing is that with all the fat I ate yesterday, I did not get diarrhea last night, so it seems my body is slowly adapting to the fat.
