Well anther day has come to a close.
Busy day, rode 10.5 miles today, average speed 13 mph. Finished in 48:34.
Calories don’t seem to add up for me, 3 meals and snacks, I’m lucky is I can consume 1400-1500 calories.
It is extremely difficult to eat 2400 calories of good food. I can’t do it !
Ran out of side salad ideas…. Then I remembered I liked kimchi. Made beeline to the local Korean grocery store, they did t have any cucumber kimchi, so they made me a fresh batch while I waited. A lot of goodness eating this, and can’t wait for lunch tomorrow. Can tuna, and 1 cup of both cabbage and cucumber kimchi….
