Vegetarian Tortilla Pizza

A super easy, guilt free alternative to get yourself a little pizza fix.

  1. Start by mixing a standard sized can of tomato sauce with the small can of tomato paste to thicken it up.
  2. Add Italian seasoning or your mixture of herbs to taste.
  3. Using a standard pizza pan, spread the tomato sauce on the tortilla and top with the cheese and peppers.
  4. Bake at 425 °F (210 °C) for about 12 minutes and enjoy!

I have what I call, my "Ghetto pizza" - A slice of bread with ketchup and american cheese on it. An upgrade, is slice of bread with some spaghetti sauce smeared on it. And my "ghetto gourmet pizza" is slice of bread (slightly toasted), Classico spaghetti sauce, and sprinkle some Parmesan cheese on top! Quick and easy it hits the spot and I didn't spend much and more importantly didn't wolf down 2 or 3 real slices of pizza or the WHOLE PIE....:(

I make something similar but I use Josephs Flax pita as it only has 2 net grams of carbs :)

I did this almost same recipe a few weeks back when I was on my pizza craving ... instead of a tortilla I used half of the pita bread and left over pasta sauce it was so good :)

I've been making these for a few years now and they are AWESOME! Note: Light Italian Blend cheese from Sargento is also good in place of the goat cheese.

I just made this. OH MY GOSH!!! It is the bomb. I deviated a little from this recipe and enhanced it more. I'm gonna submit it, so check out the recipe section for mine soon. Thanks for this recipe. It's fab.
