I just had the best "diet" dinner.. 315 kcals for a HUGE FULL dinner plate full a vegetables in light chicken broth, chicken breast and giant garden salad. I can say truthfully that it was tasty and filling.
It was one "Perfect Portions Boneless Skinless Chicken Breasts" 130kcal each... very good! Took some advice and added zucchini cut in long strips to the chicken broth then added 1/4 red sweet pepper, 1/2 a small onion, baby bella mushrooms, two stalks of celery, carrot shaving. I cooked the chicken breast in another pan, cut it up into cubes then added it to the cooked veggies, then put them on a dinner plate to eat. It filled more than half of the dinner plate, put my garden salad on the side, poured the last of the broth over the salad and veggies, just like a dressing... and...well, it was good enough to tell others about it. ~laughs~
I have tried the "lite" diet meals you can buy, I have to use the smallest plate in the house so I feel I am getting more than a snack... I am going to make this more often.

Looking into the "Paleolithic Diet", something I have thought about for a while now, but did not think there was actual "diets" based on the concept. I should have known better as there seems to every type of anyone could think of out there ~laughs~. This type of diet makes more scene to me than most, I will have to do more research before I jump in.
Note - at this point, I don't think I will weigh in on the weekends, I am still sticking to the low kcal small portion "veggie with almost no meat" diet during the week and recording every weekday. I just find that having my sons, friends, social life and oftentimes finding myself at work on the weekends leave no time to "work off the extra kacls" so I will do that during the week. I will try to watch what I am eating better.
